Quick and Easy Ramen Noodles

15 minutes is all it takes to get this healthy ramen noodle dinner on the table! Loaded with fresh veggies and rich flavors, you’ll feel good about serving this meal to your family!

▪️Servings: 2-3 persons
▪INGREDIENTS
1 tablespoon olive oil
1 cup sliced carrots
1 cup chopped broccoli
1 cup chopped onions
1 cup chopped tomatoes
1 cup chopped mushrooms
1 tablespoon of balsamic vinegar
2 teaspoons minced ginger
8 oz. ramen noodles or noodles
Juice of 1 lime
salt to taste
Mixed Herbs
Fresh cracked pepper
▪️For serving
Fresh cilantro
Sliced jalapenos
Lime wedges
▪️INSTRUCTIONS
This is one of those recipes that goes pretty quick. So rather than chop as you go, it’s best to have all your veggies sliced and ready before you start making the dish.
👉🏻Heat olive oil or vegetable oil in a pan over medium heat and cook tomatoes, broccoli, onions, carrots, and mushrooms for a few minutes.
👉🏻Then add Balsamic vinegar, some mixed herbs, pepper and salt to taste .
👉🏻Stir together and and cook for another minute.
👉🏻Add some water to it. Bring to a simmer, then add ramen noodles and continue simmering for 10 more minutes.
👉🏻Finish it off with a squeeze of lime juice and garnish with fresh cilantro and sliced jalapeno.
