For many people, eating healthy is a chore. When the world is filled with glorious pastas, the cheesiest of pizzas, and layers of cake, why in the world would we ever bother eating healthy? Well, fellow gluttons, it's because not only is it a good idea for us to eat a vegetable every now in then, but also eating healthy is actually delicious -- no lie.
If you don't know where to begin when it comes to making healthy food choices -- or if you are already following a healthy, wholesome diet but need some new recipe ideas -- we have gathered together our 4 favourite recipes to turn to for fresh, seasonal, whole-grain cooking (and baking).
These easy healthy recipes are packed full of nutritious veggies, plenty of flavour and are sure to please the fussiest of eaters.
Power bowls
Power bowls are so fun for family meals because you can switch up the veggies and toppings to suit each palate. This recipe is also a handy make-ahead option if you’re having friends over for a meal.
Simply chop all the veggies the night before and refrigerate them in containers. Just before your guests arrive, pop the veggies into the oven, cook the rice and prep the toppings. After cooking, you can all have fun assembling your own power bowls and everyone will be super impressed by the stunning rainbow-coloured meal!

💁🏻♀️Ingredients:-
➡️For the roasted veggies:-
✔️1/2 cup Red Bell peppers
✔️1/2 cup Yellow Bell peppers
✔️1/2 cup Corn Kernels
✔️1/2 slices Mushrooms
✔️1/2 cup squash
➡️For the fresh veggies:-
✔️1/2 sliced cucumber
✔️1/2 cup spinach
✔️1/4 cup cilantro, basil and mint leaves
➡️For the power bowl:-
✔️8 ounces of rice cooked according to directions, drained and rinsed in cold water
✔️1-2 sticks lemon grass
➡️For the Dressing:-
✔️1 tsp sriracha
✔️1 tsp butter
✔️1 tsp honey
✔️1 tsp lime juice
✔️1 tsp olive oil
➡️For the garnishing:-
✔️1 tsp sesame seeds
✔️1 tsp roasted walnuts and peanuts
✔️1/4 cup green onions
💁🏻♀️Directions:-
▪️Whisk all ingredients for the dressing together in a bowl until smooth.
▪️In another large bowl, Using olive oil, toss the drained rice with the lemon grass and a pinch of salt.
▪️Roast the bell peppers, squash, corn kernels , mushrooms separately using olive oil and a pinch of salt and black pepper.
▪️Serve in bowls over mixed greens, with additional dressing spooned over to taste. Garnish with fresh basil, cilantro, green onions, peanuts, walnuts and/or sesame seeds.
Roasted Vegetables Spaghetti
After months of testing veggie burger and ball recipes to no end, everything is finally clicking into place and the ingredients are binding and syncing and dancing on my taste buds.
In the meantime, I came up with this delicious recipe. They are magnificent in their own right with a great flavour and texture.
To infuse some Italian flavours into the mix, I added plenty of fresh basil, chopped tomatoes, dried oregano, and fresh parsley
Delightful roasted vegetables filled with basil, oregano, garlic, and tomatoes round out this fresh & light meal of spaghetti "pasta" .
Prep time:- 30 minutes
Cook time:- 30 minutes
💁🏻♀️Ingredients:-
✔️12 oz . dry spaghetti
✔️Salt and freshly ground black pepper
✔️6 Tbsp extra-virgin olive oil
✔️1 1/2 Tbsp minced fresh garlic (about 4 cloves)
✔️1 1/2 cup tomatoes, seeded and cut into 1/2-inch pieces
✔️1/2 cup mushrooms, sliced
✔️1/4 cup zucchini, sliced
✔️5 oz . Feta cheese , crumbled ( optional)
✔️1/4 cup finely minced fresh parsley
✔️1/4 cup fresh chopped basil
✔️1/2 tsp lemon zest
✔️1 tsp lime juice
💁🏻♀️Directions:-
▪️Cook spaghetti in boiling salted water according to directions on package. When pasta is nearly finished heat olive oil in a small skillet or saucepan over medium-low heat. Add garlic and sautte until just lightly golden, about 1 minute.
▪️Drain pasta and pour into a large serving bowl or mixing bowl. Pour olive oil and garlic mixture over pasta. Add in tomatoes, zucchini, mushrooms, feta cheese and parsley then toss to evenly coat while seasoning with salt and pepper to taste.
▪️Toss in basil, lemon zest and serve.
French Toast with berries and banana
Bananas French Toast makes a deliciously decadent breakfast! French toast topped with a maple syrup glaze full of bananas and strawberries will wake up your taste buds deliciously!
French toast is definitely an easy dish to whip up. It’s quick and even the most basic version of it is awesome.
It’s got all the elements of a traditional French toast recipe – Bread, eggs, cinnamon, butter. But then it’s topped with a maple syrup glaze that’s full of caramelised bananas and strawberries.
Prep time:- 10 minutes
Cook time:- 20 minutes
💁🏻♀️Ingredients:-
➡️French toast :-
✔️4 large eggs
✔️1/3 cup whole milk
✔️1/3 cup heavy cream
✔️1/4 tsp ground nutmeg
✔️1/4 tsp ground cinnamon
✔️1/4 tsp salt
✔️1 tsp vanilla extract
✔️2 Tbsp butter
✔️ 8 slices of bread
➡️Bananas topping:-
✔️1/4 tsp Maple syrup
✔️1/2 cup Bananas and berries for serving
✔️1/4 tsp Powered sugar
💁🏻♀️Directions:-
▪️Beat together egg, milk, salt, spices and vanilla.
▪️Heat a lightly oiled griddle or skillet over medium-high heat.
▪️Dunk each slice of bread in egg mixture, soaking both sides, leave in egg mixture for at least 30 seconds.
▪️Heat a skillet (with a lid) over medium-high heat, and add half the butter.
▪️Place french toast in preheated pan, with butter, and cook on both sides until golden.
▪️Cover the pan with a lid between sides. This will cook the inside of the bread, making it less soggy
▪️Sprinkle some cinnamon and powered sugar and topped with berries and banana and serve hot.
Ramen Soup with zucchini Noodles
Ahhhh..!! Ramen
Ramen Noodles were inexpensive and filling….but the farthest thing from anything nutritious. Well this Vegetable Ramen Soup is nothing like that. I’ve loaded this soup with vegetables and zucchini noodles and I certainly encourage you to use whatever veggies that are in season or whatever you may have in your fridge.
Feel encouraged to play around with the broth to suit your tastes. The recipe that I’ve provided will give you a good base for any Vegetable Ramen zucchini Noodle Soup and you can make it a little spicier, saltier, sweeter, etc…. if you choose!!
Prep time:- 15 minutes
Cook time:- 20 minutes
💁🏻♀️Ingredients:-
✔️1/2 Tbsp olive oil
✔️1 tsp crushed garlic
✔️1 tsp ground ginger
✔️5 cups vegetable stock
✔️3 cups mushrooms
✔️1 Tbsp soy sauce
✔️3 zucchini
✔️1 cup spinach
✔️1/4 cup grated carrots
✔️1 Tbsp chopped green onion
✔️Salt/Pepper To Taste
💁🏻♀️Directions:-
▪️Create zucchini noodles using a spiraliser. Set aside.
▪️In a pot, stir fry the garlic, ginger, and mushrooms in olive oil over medium high heat. ▪️Add in the zucchini noodles and continue to heat for about 5 minutes.
▪️Add in the stock and soy sauce. Bring to a boil.
▪️Immediately lower heat and allow soup to simmer until the noodles are soft.
▪️Add in mushrooms, spinach, carrots, green onions, and salt/pepper.
▪️Serve hot and enjoy!
